INGREDIENTS

1oz lime & cucumber oleo saccharum*
- 3oz chilled strong brewed mint tea
- 1tbsp uncooked white rice
- 1oz fresh lime juice
- Pinch of salt

Tonic water to float
Add oleo saccharum, mint tea, lime juice, and white rice to a mixing glass and stir. Strain into a collins glass with ice. Top with tonic water and garnish with a cucumber slice. Enjoy!
*to make the oleo saccharum add equal parts lime peel and sugar (raw, castor, or coconut sugar all work). Macerate the peel and sugar, and store covered at room temperature for 12hrs. Add cucumber peel, macerate again, and let sit for another 4-6hrs. Strain the syrup into a container and use immediately or store in the fridge!
